Carrot Ribbon Salad with Turmeric Honey Dressing

This is my absolute go to recipe when I am craving something sweet, tangy and crunchy. I pair the ribboned carrots with an anti-inflammatory dressing (which is essentially the star of the show) and can be used for several other salads as well.



In terms of portion, ribbon as many carrots as your heart desires. I eat them on their own, add them to other salads or keep as a side dish.


ANTI-INFLAMMATORY DRESSING 🫶

This is for a big batch, I usually keep this stored for the week and pull it out whenever I need to dress any veggies.

  • 1/3 cup extra virgin olive oil

  • 3/4 cup apple cider vinegar (I like a more tangy taste/more vinegar)

  • 1 tbsp turmeric

  • 1 tsp black pepper

  • 1 tsp dried mint (you can omit this if you do not like mint)

  • 1 tbsp raw honey

  • 1 tsp sea salt


Feel free to adjust the portions to your liking (for example, I LOVE my salads to be more tangy/vinegary so sometimes I even omit the honey when I'm craving something more savoury).


Top on any salad you wish and enjoy the benefits of turmeric, ACV and honey on the daily!
