Chocolate Fudge Brownies

Chocolate craving killer = this brownie. As you can see from my oven's time stamp in the photo, I was clearly having a raving sweet tooth later at night and this recipe hit the spot. It is incredibly easy (I promise you wont be able to mess it up) and you can eat it hot or chilled.

What You'll Need:

  • 135g chocolate of choice (I used semi-sweet and dark chocolate)

  • 1 egg

  • 100g butter

  • 2 shots of espresso (this makes the chocolate pop in flavour. Trust me, the coffee flavour will not be the star of the show. If you don't have espresso on hand, 2 tbsp of instant coffee mixed with a little bit of warm water works well).

  • 1/3 cup cocoa powder

  • 2/3 cup almond flour

  • 1/3 cup gluten free flour blend (or you can use 1 full cup of almond flour! Both taste great)


Directions:

  • Melt together your butter and chocolate and mix until well combined. Once your mixture is cooled a bit, add in your egg and whisk together. Slowly add in your espresso while mixing, followed by your dry ingredients: cocoa powder, almond flour and gluten free flour blend (or 1 full cup of almond flour).

  • Once well combined, pour into a 8x8 baking dish and bake for 25-30 minutes until a toothpick comes out with wet crumbs.
