Garlic Greens & Eggs (the best savoury breakfast)

This is my absolute go to savoury breakfast and is super easy to make (even if you are in a rush) and is 10/10 on the satisfying scale.


What You'll Need:

  • Eggs (as many as you'd like)

  • Collard Greens (chopped - I pre freeze a bag of chopped greens, this makes it easier to cook with in the mornings when I may be limited for time)

  • 1 clove of garlic

  • Seasonings: salt, pepper, saffron

  • 1 tsp extra virgin olive oil

  • Sourdough Toast


Directions:

  • Start off by boiling your eggs to your liking, while simultaneously toasting your sourdough

  • While the eggs are boiling and the sourdough is in the toaster, grab a pan and add a handful of your frozen greens alongside your chopped or crushed garlic.

  • Cook for 3-5 minutes and add in your salt, pepper and saffron.

  • Assemble: Buttered sourdough, chopped hardboiled egg and top with your greens and garlic mixture. Add a small drizzle of olive oil on top and enjoy!
