Honestly when it comes to high protein meals, we need something simple, tasty and easily hits our target goal. If you're ever in a pinch and need to make something high protein & taste great, throw this into your routine and see how it will soon become a staple for you (or your kids!).
You can choose to either bake this into one giant pancake (like I did in this photo and then quartered it off) or you can make mini ones to stack. All you will need on hand is:
1 tbsp avocado oil or butter (or any oil of your choice)
3 tbsp oat flour (I easily blended 3 tbsp oats into a fine flour)
1 egg
1 scoop of vanilla protein (I use the Schinoussa brand in French Vanilla)
3 tbsp milk of choice
Pinch of: baking powder, baking soda, cinnamon and salt
Simply treat this batter as you would any pancake batter and you are good to go!
To jazz this up, I love to pair my protein pancakes with a fresh berry compote (and I promise you it is truly the easiest thing). I simply melt down as many berries as I would like for topping, into a sauce pan with 1 tbsp water, squeeze of lemon and a dollop of honey. I let that melt down and top it on my pancake after it's slightly cooled.
