She's sweet, she's earthy, she is the VIBE.
It's 2024 and us gals know we absolutely need to eat something first (preferably filled with good fats) upon waking, BEFORE having coffee, to keep our female hormones happy 🫶 . Not many of us are ready to wake up and eat a full blown meal, but it is important to get something in your stomach before consuming caffeine. These energy bites have been my saviour lately in the mornings. They are super easy to make, can be stored in the fridge for a week and are light and satisfying.
Lets get to it.
What You'll Need:
3/4 cup almond flour
1/4 cup oats (or oat flour)
1/2 cup creamy nut butter (I used peanut butter)
1.5 tbsp matcha powder (I use ceremonial)
2 scoops of vanilla protein
2 tbsp raw honey
1 tsp vanilla extract
1 tsp salt
1-2 tbsp oat milk (if needed)
Directions:
Add your almond flour, oats/oat flour, salt and protein into a bowl. Mix until well combined.
Add in your raw honey, nut butter, and vanilla extract and mix until well combined.
At this point - if your batter is not sticky enough to form into balls you can go ahead and slowly add in oat milk or any milk of choice, 1 tablespoon at a time until you get the desired consistency. If your batter is too sticky - refrigerate for 30 minutes before forming into balls.
I like to double this recipe and make enough bites (2 per day) for the week, however, you can make them as big or as small as you desire!
